Fueling Salad

Food is the fuel of the body and every surfer knows how important it is to eat right but eating right does not always have to be boring so i am going to share with you a Bagabond HQ favourite.

Warm Spicy Beetroot, Butternut Squash and Feta Salad



This is so easy to make but so delicious!

Ingrediants:

Butternut Squash
Uncooked beetroot
Feta Cheese
Pine Nuts
Raw Spinach Leaves
Paprika
Olive Oil
Sea Salt

How to:
This is as easy as a recipe can be.

Preheat the oven to 200c (425f gas mark 7)
Peel and chop the butternut squash and the beetroot. Place in a bowl and lightly cover with olive oil, then sprinkle on some paprika and a littel sea salt. Make sure you toss the veg before putting on a baking tray.
Put the veg in the oven for 45 minutes until tender
Put some raw spinach leaves on a plate then put the veg on top
Crumble some feta and put on top of the veg and then add some pine nuts
Now enjoy!
